Blackberry coulis

This three-ingredient blackberry coulis is the perfect topping for ice cream or pancakes.

This easy-to-make blackberry coulis uses only three ingredients and freezes well, making it the perfect recipe to use up the blackberries you've picked during the summer months- keep a batch in the freezer and use it as a topping the next time you make pancakes or chocolate fudge cake

Ingredients

  • 250g Blackberries
  • 50g Caster sugar
  • ½tsp Vanilla extract

Method

  • Step 1

    After washing the blackberries, place them in a pan with the caster sugar and bring to the boil.

  • Step 2

    Simmer until the fruit is soft, then stir in the vanilla extract.

  • Step 3

    When you've added the extract, let the mixture cool a little before straining it through a sieve to remove the seeds.
