Orchard granola

Mix oats, nuts, honey and oil, along with a few extras to make an energy-rich cereal or snack


I love making granola. I also love the fact that once the basic elements are in place (oats, nuts, honey and oil), I can pretty much free-style with the fruit additions. I’ve stuck to dried apples, raisins and cherries in this instance, but any dried fruit will work.

Ingredients

  • 200g Porridge oats
  • 25g Whole almonds
  • 25g Whole walnuts
  • 25g Whole hazelnuts
  • 25g Pumpkin seeds
  • 75ml Honey
  • 50ml Sunflower oil
  • 50g Dried apple slices
  • 50g Raisins
  • 50g Dried cherries

Method

  • Step 1

    Heat oven to 180C/160C fan/gas 4. Mix the oats, nuts, pumpkin seeds and sesame seeds together in large bowl, then stir in the honey and oil. Spread evenly and thinly onto a large, parchment-lined baking tray, then bake for 10-15 minutes until golden.

  • Step 2

    Left to cool, then break up into small clumps. Toss through the apple slices, raisins and cherries, then serve with cold milk. This granola will keep for a month in a tightly sealed container.
