Sorrel soup

Make this easy sorrel soup using foraged leaves

An easy sorrel soup recipe that tastes delicious served with warm, crusty bread.

Ingredients

  • 2 Handfuls of sorrel leaves
  • ½ Lettuce
  • 1 White onion, diced
  • 1 Potato, large, cut into pieces
  • 1l Vegetable stock or chicken stock
  • 250ml Milk
  • A large knob of butter

Method

  • Step 1

    Soften sorrel, lettuce and chopped onion in butter then add the diced potato and hot stock.

  • Step 2

    Simmer for 10-15 minutes until the potato is cooked.

  • Step 3

    Whizz with a stick blender and then add milk, pepper and salt to taste. Simmer for two minutes and then serve.
