Turkey, curried mayo and watercress pitta
Use up your Christmas Day leftovers with this easy turkey, curried mayo and watercress pitta.

Ingredients
- 1 Pitta bread, lightly toasted and opened to make a pocket
- Butter (optional)
- A handful of watercress, roughly chopped
- A couple of slices of cooked turkey
- 1tbsp Mayonnaise
- 1tsp Curry paste
- 1tsp Mango chutney
- Salt and freshly ground black pepper
Method
Step 1
Spread the toasted pitta with butter, if using. Add the watercress and top with the sliced turkey.
Step 2
In a small bowl, mix together the mayonnaise, curry paste and mango chutney, seasoning with a little salt and pepper. Spoon into the pitta and spread it out over the watercress. Lightly press together to seal, then wrap up tight in baking paper to keep it secure when you’re on the move.
